Wheat and gluten: Nigerian foods to check

Many Nigerian staples are naturally free of wheat, which helps. The wheat tends to be in bread, baked snacks, noodles and some swallows. Wheat allergy and coeliac disease are different conditions, and this page applies to both with the same caution: wheat flour and cross-contact are what to look for.

Where wheat and gluten often hides

These are common patterns, not guarantees. A particular cook or brand may do it differently, so treat each line as a reason to ask.

  • Bread, buns, doughnuts and meat pie. Made with wheat flour.
  • Chin chin and puff-puff. Typically made with wheat flour, and often fried in oil shared with other foods.
  • Semovita and wheat swallow. Made from wheat, unlike eba, amala or pounded yam.
  • Noodles, pasta and macaroni. Wheat-based unless the pack says otherwise.
  • Seasoning cubes, sauces and some stews. Wheat can be used as a filler or thickener. Read the label.
  • Beer and some drinks. Beer is commonly made from barley or wheat. Check drinks too.
  • Fried snacks and street food. Anything battered or coated, such as fried yam with a flour dusting, fish rolled in flour, or snacks fried in oil shared with chin chin, can pick up wheat.
  • Pies, rolls and shawarma. The pastry or bread is wheat, and the filling or sauce can be thickened with flour too.

Safer starting points

  • Naturally wheat-free staples: rice, yam, cassava (garri, fufu), plantain, beans, maize (pap, tuwo masara) and millet or sorghum dishes.
  • Swallows made from yam flour or cassava, such as pounded yam, eba and amala, checked for mixed flours.
  • Soups thickened with egusi or ogbono.

What to ask before you eat

Say that it is an allergy, not a preference. Then ask plainly:

  • Is this made with wheat flour or a wheat swallow?
  • Is it fried in the same oil as flour-based snacks?
  • Does the seasoning or sauce contain wheat?

Tell Fuuud once

In the chat, say it the way you would to a person: “I have coeliac disease, so no wheat, barley or rye”. Fuuud stores one dated line in your own encrypted record:

2026-10-07 | condition | coeliac disease - avoid wheat, barley, rye

From then on every meal suggestion is checked against it, and a meal that conflicts is blocked, not just flagged. If you change your mind you can retract the fact in Settings. How the record is kept is explained in how Fuuud keeps your health memory private.

Not medical advice

This is a reading aid, not medical advice. Recipes and ingredients differ by cook, region and brand. If you have a diagnosed allergy or condition, follow your clinician's guidance, read labels, and tell the person serving you that it is an allergy.

Common questions

Is pounded yam safe for a gluten-free diet?

Pounded yam made from yam alone has no gluten. Some instant flours are blended, so check the pack.

Are millet and sorghum gluten-free?

They do not contain gluten naturally, but they can be milled next to wheat. For coeliac disease, ask about cross-contact.

Is wheat allergy the same as coeliac disease?

No. Wheat allergy is an immune reaction to wheat proteins. Coeliac disease is an autoimmune reaction to gluten, which is also in barley and rye. The foods to avoid overlap, but your clinician decides which applies to you.

Baked goods with wheat often contain egg and milk as well.
